Ingredients

  • ¼ cup (60ml) olive oil
  • ½ tsp ground cumin
  • ½ tsp ground coriander
  • ½ tsp paprika
  • ½ tsp turmeric
  • ½ tsp salt
  • ½ tsp chilli flakes
  • ¼ tsp cinnamon
  • 1 courgette, cut into batons
  • 2 red or yellow capsicums, seeds removed, cut into strips
  • ½ onion, thinly sliced
  • 3 x 180g sirloin steaks
  • ¾ cup (200g) plain yoghurt,
  • 1 garlic clove, finely chopped
  • 8 mint leaves, shredded, plus extra to serve
  • Squeeze of lemon juice
  • 6 wraps, lightly chargrilled
  • 1-2 handfuls spinach leaves

Method

  1. Heat a barbecue grill to medium heat. Combine the oil, cumin, coriander, paprika, turmeric, salt, chilli flakes and cinnamon in a small bowl.
  2. In a large bowl, combine the courgette, capsicum and onion. Add half the spiced oil and toss to combine. Brush the remaining spiced oil over the steaks.
  3. Add the vegetables to the grill and cook, turning occasionally, for 5-8 mins or until coloured and tender. Add the steaks to the grill and cook for 2 mins each side for medium rare or until cooked to your liking. Remove from the barbecue and rest steaks for 5 mins before slicing into strips.
  4. Combine the yoghurt, garlic, shredded mint and a squeeze of lemon and season to taste with salt and pepper.
  5. Place the wraps on a clean work surface. Divide spinach leaves among wraps. Top with the barbecued vegetables and sliced steak. Drizzle with yoghurt mixture and scatter with extra shredded mint. Roll to enclose. Serve immediately.
