Meat-lovers traybake

Dedicated to meat lovers, this inspired traybake has bbq flavoured meatballs, bacon and a rich herby tomato sauce. Serve with seasonal salad greens and crusty bread for a sensational meal.

  • 500g beef mince
  • 1 egg, beaten
  • 2 cloves garlic, minced
  • 1 Tbsp bbq sauce
  • 1 small onion, finely diced
  • 250g streaky bacon
  • 2 cans (400g) diced tomatoes with herbs

Method

  1. Preheat your oven to 200°C fan bake.
  2. In a large bowl mix together the beef mince, egg, garlic, bbq sauce, onion, salt and pepper. Roll into 12 balls and place in a large roasting pan. 
  3. Arrange the bacon around the meatballs. Place in the oven to bake for 15 minutes or until the bacon and meatballs are golden brown.
  4. Spoon the diced tomatoes into the pan. Return to the oven to cook for a further 10 minutes or until the meatballs are cooked through.
  5. Leave to sit for 5 minutes before serving, then enjoy!

Top tip: Before returning to the oven to bake, add in some mixed olives and a sprinkling of grated cheese over the top for a flavourful twist.
