- Serves 4-5
- Prep time: 15 mins + 30 marinating | Cooking time: 1 hrs
Tender butterflied chicken finished with a sweet and savoury honey-soy glaze. Perfect for the barbecue or a shared feast, it’s an easy centrepiece with flavours the whole table will love.
Ingredients
- 1.5kg whole chicken
- 2 tbsp honey
- ¼ cup (60ml) soy sauce
- 2 tbsp sesame oil or vegetable oil
- 1 tbsp crushed garlic
- 1 tbsp crushed ginger
- 2 lemons, halved
- 2 spring onions, cut into fine strips
- 1 sliced red chilli or ½ tsp chilli flakes
- Sesame seeds, to serve
Method
- Place the chicken, breast-side down, on a clean work surface. Use kitchen scissors to cut along each side of the backbone to remove. Place the chicken breast-side up. Press down on the breastbone to flatten.
- Mix the honey, soy sauce, oil, garlic and ginger in a bowl. Brush three-quarters of the honey mixture all over the chicken. Place in the fridge for 30 mins to develop the flavours.
- Heat a barbecue grill to medium low. Lightly grease grill plate. Place chicken, skin-side up, in the centre of the grill and cook for 40 mins then brush with remaining glaze. Cook chicken for a further 15-20 mins or until golden and juices run clear when pierced in the thickest part (chicken should register 75°C on an instant-read meat thermometer). Grill lemons, cut-side down, for 3 mins or until charred.
- Arrange the chicken and lemon on a serving platter. Top with the spring onion and chilli. Sprinkle with sesame seeds to serve.
- Make it your way: No BBQ? Cook the chicken in a 160°C oven for about 1 hour. You can also use chicken thighs or drumsticks for this recipe.
- Time-saver: A butterflied chicken not only cooks faster, it’s also a great, budget-friendly way to feed a crowd.
