  • DIY crumbed chicken: Making your own Southern-style chicken is super-easy. Cut 2 chicken breasts horizontally to make 4 chicken schnitzels. Combine 1/2 cup (75g) flour, 1/2 cup (50g) fine breadcrumbs, 1 tsp garlic & herb salt, 1 tsp onion powder and 1 tsp smoked paprika in a bowl. Combine 1/4 cup (75g) mayonnaise and 1/2 cup (125ml) milk in a separate bowl. Dip chicken into the mayonnaise mixture and then coat in seasoned crumbs. Place the chicken on a lined baking tray and spray with oil. Cook in a 185°C oven for 20-25 mins or until golden and cooked through.
