Have a tropical summer moment indulging in this grilled pineapple caramelised in honey and cinnamon. Topped with toasted coconut chips and served with a scoop of creamy vanilla bean ice cream or whipped cream. It’s a wonderfully warm and magical dessert.

  • 1 pineapple, peeled and cut into wedges
  • ¼ cup honey, warmed
  • ½ tsp ground cinnamon
  • ¼ cup coconut chips, toasted
  • Ice cream or whipped cream

Method

  1. Preheat your BBQ or grill pan to medium-high heat.
  2. Place the pineapple in a large bowl.
  3. Stir together honey and cinnamon until well combined, then pour over the pineapple. Toss gently to coat.
  4. Lightly brush your BBQ with oil, then grill the pineapple for a few minutes on each side or until caramelised.
  5. Garnish with coconut chips and serve with ice cream. Enjoy.
Top tip: For a pop of herbaceousness, garnish with fresh mint leaves to finish.
