Ingredients
- 250g plain vanilla biscuits
- 120g butter, melted
- 1 tsp cinnamon
- ¼ cup (60ml) cold water, plus 1 cup (250ml) extra for jelly
- 2 tbsp gelatine
- 500g cream cheese, at room temperature
- ¾ cup (165g) caster sugar
- 1 cup (280g) vanilla or plain yoghurt, at room temperature
- 2 cups fresh or frozen strawberries, sliced
- 85g packet strawberry jelly
- ½ cup (125ml) boiling water
Method
- Line a 22 x 27cm slice pan with baking paper. Place biscuits in a food processor and process until finely crushed. Add butter and cinnamon and process until combined. Spoon into the lined pan and use the back of a spoon or the base of a flat-bottomed glass to spread and press evenly over the base. Place in the fridge for 20 mins to chill.
- Place the 60ml cold water in a heatproof bowl. Sprinkle over gelatine and set aside for 5 mins to soak. Heat in the microwave at 10-second intervals or over a bowl of boiling water until melted and clear but not hot.
- Place the cream cheese and sugar in a large bowl. Using an electric beater, beat for 4-5 mins or until smooth and creamy. Add the yoghurt and beat until just combined.
- Beat the cooled gelatine into cream cheese mixture until combined. Pour over biscuit base. Smooth the top and arrange strawberry slices evenly over the filling. Transfer to the fridge for 30 mins to chill.
- Dissolve the jelly crystals in boiling water. Add the extra cold water, then stir. Place in the fridge until cold.
- Pour the cold jelly over strawberry topping. Chill for 2 hours or until jelly has completely set. Cut into squares or rectangles to serve.
- Make it right: Press the strawberry slices firmly into the cream cheese and gelatine mixture to ensure they stay in place when the jelly is poured on top.
