Stone fruit and toasted almond cheats ice cream

This easy “cheats” ice cream is the perfect fresh and fruity dessert for hot summer days. Simply grab a tub of Pams Creamy Vanilla Ice Cream and some beautiful seasonal fruit, and in minutes transform it into your own tasty creation. No ice cream churner required!

  • 1 Ltr Pams Creamy Vanilla Ice Cream
  • 8 ripe stone fruit, sliced or diced (we use peaches, nectarines and apricots)
  • ½ cup sliced almonds, toasted

Method

  1. Scoop the ice cream into a large bowl and leave to sit for 10 minutes, or until it is a soft spreadable consistency.
  2. Reserve a handful of stone fruit and almonds to garnish, and add the remaining fruit and almonds to the mixing bowl with the softened ice cream.
  3. Mix well to combine, pour into loaf tin and smooth to create a flat surface.
  4. Scatter the reserved stone fruit and almonds over the top and freeze overnight.
  5. Once frozen, use an ice cream scoop to serve.
Top tip: Switch up the type of fruit and nuts you use to create different flavours and use what’s in season. Try fresh mixed berries with toasted hazelnuts or passionfruit and pineapple with toasted coconut flakes.
