
15 Minute pork fried rice

One-pan 15 minute pork fried rice is a hassle-free meal with minimal cleanup. It’s great any day of the week, whether you need an effortlessly easy mid-week solution or a no-stress weekend dinner.
Ingredients
3 cloves garlic, minced
1 onion, diced
300g pork mince
4 cups cooked rice
2 cups frozen mixed vegetables
3 eggs, beaten
¼ cup soy sauce
2 Tbsp oyster sauce
Method
Bring a wok or large frying pan to high heat with a drizzle of oil. Cook the garlic, onion and pork mince for 5 minutes or until browned.
Add the rice and mixed vegetables and stir-fry for a few minutes.
Push the rice to the side of the wok and pour the egg into the empty side. Stir to scramble then combine with the rice.
Pour in the soy sauce and oyster sauce and mix until well combined. Cook for 5 minutes or until heated through.
Serve immediately.
Tips:
Top your fried rice with sliced spring onions and a drizzle of chilli oil for a flavourful addition.
