A beautifully glazed ham with honey, mustard and apple flavours. Rich, glossy and inviting, it makes a memorable centrepiece for the Christmas table and is just as delicious served warm or cold.

Ingredients

  • 7-8kg half-leg ham
  • 30-40 whole cloves
  • ½ cup (180g) honey or golden syrup
  • ¼ cup (70g) wholegrain mustard, plus extra to serve
  • ¾ cup (185ml) apple juice

Method

  1. Preheat the oven to 180°C. Line a large roasting pan with foil.
  2. Run a small sharp knife down the back of the ham. Using your fingers, gently separate skin from fat. Remove and discard skin. Run the knife over the fat to lightly score all over in a diamond pattern. Push a clove into the centre of each diamond. Transfer the ham to a wire rack on the lined pan and add 2 cups (500ml) water to the base of the pan (this prevents the excess glaze burning).
  3. Combine the honey, mustard and apple juice in a small bowl to make a thick glaze. Brush half the glaze over the top and sides of the ham. Bake for 30 mins. Remove from oven and carefully brush over the remaining glaze. Bake for a further 20-30 mins or until the ham is golden and heated through.
  4. Transfer ham to a serving platter. Decorate with fresh herbs. Serve with extra mustard or your favourite chutney.
