Greek-style salad with olives & feta

  • Serves 6
  • Prep time: 15 mins

Bring a taste of the Mediterranean to the table with this Greek-style salad, finished with olives and feta. Fresh, colourful and full of flavour, it’s a welcome side for barbecues and relaxed summer lunches.

Ingredients

  • 4-6 tomatoes, thinly sliced
  • 1 telegraph cucumber, halved lengthwise, seeds removed, sliced
  • Handful of rocket leaves
  • 1 small red onion, thinly sliced
  • ½ cup pitted kalamata olives, sliced
  • 100g feta, crumbled
  • ½ cup mint leaves
  • ¼ cup (60ml) olive oil
  • 2 tbsp lemon juice
  • 1 tbsp lemon zest

Method

  1. Arrange the tomato on a serving platter. Top with the cucumber, rocket and red onion. Scatter with olive, feta and mint.
  2. To make the dressing, combine the olive oil, lemon juice and lemon zest in a screw-top jar. Season well with salt and freshly ground black pepper and shake to combine. Drizzle the dressing over the salad just before serving.

Which tomato? If you’re making this for a casual dinner, use whatever ripe tomatoes you have on hand. For a party or Christmas Day, mix things up by using a variety of tomatoes, such as cherry tomatoes and vine-ripened tomatoes.
