Soba noodle salad

This soba noodle salad is a refreshing, super quick and easy-to-make meal any day of the week. The noodles are coated in delicious ginger, soy and honey sauce and topped with toasted sesame seeds and fresh spring onions.

Ingredients

  • 320g soba noodles

  • ¼ cup soy sauce

  • 2 Tbsp honey

  • 1 Tbsp sesame oil

  • 2 Tbsp grated fresh ginger

  • 2 Tbsp rice vinegar

  • 2 spring onions, sliced

  • 3 Tbsp sesame seeds, toasted

Method

  1. Prepare the noodles per packet instructions, draining and rising under cold water once cooked.

  2. In a large bowl, combine a generous drizzle of oil with soy sauce, honey, sesame oil, ginger and rice vinegar.

  3. Add the soba noodles and toss to coat.

  4. Garnish with spring onion and sesame seeds. Serve immediately.

Top tip: Toss the noodles with a shredded carrot and a cup of shredded cabbage for added crunch.
