
Curried rice salad

A wonderful way of using cooked rice, this simple recipe goes so well with hot or cold meals, and it’s especially good at barbecues.

Ingredients
1 1/2 Cups cooked rice
1/4 Cup finely chopped onion
1 Tablespoon vinegar
2 Tablespoons salad oil
1 Teaspoon curry powder
1 Cup chopped celery
2 Cups cooked green peas
1 Cup salad dressing
Method
Mix cooked rice, onion, vinegar, salad oil and curry powder and refrigerate for 2 hours, then add celery, peas and salad dressing.
Can be adjusted to suit your taste.
