Labneh
- 750g Greek-style yoghurt
- 1 small garlic clove, finely crushed
- 1 tsp fine sea salt
Mustard fruits
- 1 tbsp olive oil
- 2 shallots, finely chopped
- 5cm-piece ginger, peeled, grated
- 1 star anise or ½ tsp mixed spice
- ½ cup (125ml) apple cider vinegar
- ¾ cup (165g) caster sugar
- 2 tbsp wholegrain mustard
- 3 cups chopped fresh fruits, such as figs, pear, apple, nectarines or peaches
Method
- To make the labneh, combine the yoghurt, garlic and salt in a bowl. Line a large sieve with muslin or cheesecloth and place over a large bowl. Spoon the yoghurt mixture into the lined sieve. Tie the cloth corners together to create a ball and secure with kitchen string. Place in the fridge for 24 hours to drain.
- Meanwhile, to make the mustard fruits, heat the oil in a medium saucepan over medium heat. Add the shallot, ginger and star anise or mixed spice. Reduce heat and cook, stirring occasionally, for 2 mins or until soft and aromatic.
- Add the vinegar, sugar, mustard and ½ cup (125ml) water. Simmer for 10 mins or until reduced and thickened to a syrup.
- Add the chopped fruit and cook, stirring, for 8 mins or until the fruit is soft and has a jam-like consistency. Set aside to cool before spooning into sterilised jars.
- Transfer the labneh to a serving bowl and top with mixed herbs, lemon zest and freshly ground black pepper. Drizzle with oil. Spoon mustard fruits into a serving bowl. Serve with labneh, deli meats, cheese, fruit and veges, bread and crackers.
