
Salmon mashed potato bites

Jazz up your leftover mashed potato by making these salmon mashed potato bites – perfect as a starter or finger food for a party.

Ingredients
olive oil or cooking oil spray
3 cups mashed potato
1 Tbsp lemon zest
200g Crème Fraiche
100g cold smoked salmon, cut into thin strips
2 Tbsp chopped fresh dill (or 1 tsp dried dill)
salt, to taste
freshly cracked pepper
flour to dust
Method
Preheat oven to 220°C.
Spray mini muffin tins lightly with oil, or apply oil with a paper towel.
Mix together mashed potato, lemon zest, crème fraiche until soft. Add salmon and fresh dill. Combine well until ingredients are evenly distributed amongst the potato. Season with salt and pepper.

Place in the oven and cook for 12-15 minutes until the tops begin to brown.
Remove from oven and allow to rest for a few minutes before serving hot. TIPS: - If mashed potato is cold, break into small clumps with the back of a fork. This makes mixing the rest of the ingredients easy. - If you have any leftover crème fraiche, serve it with the potato bites. - These can be made using regular sized muffin tins, you will just need to increase the cooking time. - Zest lemon whole and freeze the remaining lemon for another recipe.
