Cocktail or Silverskin onions are small onions pickled in white vinegar making them much lighter in colour than standard pickled onions. This lighter colour gives them the Silverskin name while their use in martinis, the Gibson in particular, is the source of the cocktail moniker. Translucent, succulent, crisp and crunchy they make an ideal accompaniment for cold meats, cheeses, salads and sandwiches.
