Cheese and thyme soda bread
Cover this cheese and thyme soda bread in butter or dunk it in your favourite stew or soup for a wonderful time. As an Irish-style bread, it’s made without any yeast and is incredibly versatile.

- 1 ¾ cups milk, warmed
- 2 Tbsp white vinegar
- 4 cups plain flour
- 1 ½ tsp baking soda
- 3 Tbsp fresh thyme leaves
- 1 cup grated tasty cheese
Method
- Preheat your oven to 180°C fan bake and line a baking tray.
- In a medium jug or bowl, whisk together the milk and vinegar. Set aside for 10 minutes to allow the milk to turn into buttermilk.
- Combine the flour, baking soda, thyme, cheese and a teaspoon of salt and pepper in a large bowl.
- Make a well in the centre of the flour and pour in the buttermilk. Mix until a dough forms, shape into a round, then transfer onto the prepared baking tray. Score the top of the dough.
- Bake for 35-40 minutes or until golden brown and the bread sounds hollow when you tap the bottom. Transfer to a cooling rack and leave to cool before serving.
Tips:
- Before baking your beautiful bread, brush a little milk over the top of the dough and sprinkle with one and a half tablespoons of rolled oats for a crunchy topping.
- Mix it up and substitute the fresh thyme and tasty cheese for your favourite fresh herbs and cheese to create a new flavour sensation.
