Mele's one pot goulash
A hearty, comforting one pot classic.

- 500g beef mince
- 1 onion, diced
- 3 cloves garlic, minced
- 1 can (400g) diced tomatoes
- 1 can (420g) tomato soup
- 3 cups grated veges of your choice (Mele likes to use carrot and frozen spinach)
- 1 ½ Tbsp Worcestershire sauce
- 1 tsp brown sugar
- 2 cups low sodium beef stock
- 2 bay leaves
- 500g dried penne pasta
- 1 cup of grated cheese
Method
- Bring a large pot to medium heat with a drizzle of oil. Cook the beef mince, onion and garlic for 5 minutes or until browned.
- Add diced tomatoes, tomato soup, grated veges, Worcestershire sauce, brown sugar, beef stock, bay leaves, salt and pepper. Bring to a simmer, cover and cook for 10 minutes.
- Reduce to a medium-low heat and stir through the penne pasta. Cover and cook for a further 20-25 minutes or until the pasta is cooked. Remove from heat and take out bay leaves.
- Stir through half the cheese, then sprinkle the remaining on top.
- Let the cheese melt and then serve and enjoy!
Top tip: Customise the veges to your liking, the kids will have no idea.
Garnish with chopped parsley to finish.
