Steak Diane with crispy potatoes

Ingredients

Method

Ingredients

  • 800g baby potatoes
  • 650g steak of your choice
  • ½ onion, finely diced
  • 1 clove garlic, mined
  • ½ cup chicken stock
  • 1 tbsp dijon mustard
  • 3 tbsp sour cream or crème fraîche

Method

  1. Preheat your oven to 200ºC fan bake. Cut the potatoes in half and place them on a baking tray. Season with salt and pepper and toss with a drizzle of oil. Cook for 20-25 minutes or until cooked through and crispy.
  2. Bring a drizzle of oil to medium-high heat in a large frying pan. Season the steaks with salt and pepper. Cook for 3-4 minutes on each side for medium-rare or until cooked to your liking. Remove from pan, cover loosely with foil and set aside to rest.
  3. To make the sauce, bring a drizzle of oil to medium heat in a large frying pan. Cook the onion and garlic for a few minutes or until translucent. Add stock and bring to a simmer. Once simmering, stir through dijon mustard and crème fraîche. Season to taste with salt and pepper, then remove from the heat.
  4. Serve crispy potatoes alongside sliced steaks and drizzle over the sauce.

Top tip: Take your sauce to the next level by adding a cup of sliced mushroom with the onion and stirring through a large handful of chopped parsley into the sauce with the mustard.
