
Slow cooker teriyaki beef

A relishing meal for the whānau that’s packed full of veggies and tasty tender beef. All assembled in a slow cooker, this slow cooker teriyaki beef, is great any day of the week. Serve with rice tossed with toasted sesame seeds, sesame oil and sliced spring onion for a flavourful accompaniment.
Ingredients
1kg beef chuck or rump steak, diced
2 onions, sliced
400g teriyaki stir fry sauce
1 cup beef stock
2 carrots, halved lengthwise and thinly sliced
1 broccoli, cut into florets
Method
Place the beef in a slow cooker, along with the onion, teriyaki sauce and beef stock. Stir to combine.
Cook on high for 4-5 hours or until the beef is just tender.
Add carrots and broccoli and stir to combine. Cook for a final 20-30 minutes or until the vegetables are tender.
Serve and enjoy.
Top tip:
To bulk up this meal, add a sliced capsicum in with the broccoli and carrots.
Adjust the amount of teriyaki sauce to taste, as some sauces have a stronger flavour. For a milder taste, use a low-sodium teriyaki sauce or reduce the amount slightly and add more stock or water.
