  • Ice
  • 500ml sparkling water
  • Gin or vodka, if desired

  1. In a saucepan, combine the lemon juice, zest and honey. Place over a low to medium heat, and cook while stirring for 3-4 minutes or until the honey and lemon are completely incorporated.
  2. Pour the lemon honey mixture into a jug, and leave to cool in the fridge for 30 minutes.
  3. Once cool, divide the syrup amongst 4-6 glasses. Then add a single shot of gin or vodka if desired. Fill the remainder of the glass with ice, then top with sparkling water.
  4. Slice the remaining lemon and add a slice with fresh mint to the glasses for garnish.
  • If you don’t want to serve all the glasses right away you can save the syrup and use it for a daily drink with water!

  • What are the benefits of lemon and manuka honey?
    • Manuka Honey has many health benefits. It's a natural anti-inflammatory, has antioxidant properties and can boost immunity. Lemons, in addition to offering vitamin C and fibre, can also improve immunity and digestion.
  • What if I don’t like sparkling water?
    • No problem! You can substitute the sparkling water for your favourite carbonated drink. We like ginger ale, sprite, 7 up, or even ginger beer for added flavours.
