Bacon and feta crispy croissant

Transform stale croissants into a meal sensation with these bacon, pesto and feta crispy croissants.  Toasted in butter with a drizzling of honey and topped with savoury toppings, it’s an indulgent and enticing option any time of the day.

  • 4 croissants 
  • Honey
  • Basil pesto
  • 8 cooked bacon rashers
  • Rocket or seasonal salad leaves
  • Feta Cheese

Method

  1. Using a rolling pin, flatten the croissants to around 1cm in thickness. 

  2. In a large frying pan, melt a knob of butter over a medium heat.

  3. Add the croissants, drizzle with honey and toast for a few minutes on each side or until golden brown. 

  4. Place the croissant on a plate and spread the basil pesto over each croissant. Top with bacon, rocket and feta.

  5. Serve and enjoy.
