- 1-2 slices toasted bread
- 2 Tbsp pesto
- ½ avocado, sliced
- 4 cherry tomatoes, sliced
- 4-6 fresh bocconcini or ½ fresh mozzarella ball
- 1 Tbsp balsamic vinegar
- Fresh basil leaves
- Spread the toast with pesto. Top with sliced avocado and tomato, then tear the bocconcini and nestle amongst the avocado and tomato.
- Drizzle over balsamic vinegar and garnish with fresh basil leaves.
