Brioche french toast

Who doesn't love French toast? Use Pams Finest Briche Loaf for a quick and easy brunch.

Ingredients

  • Brioche French Toast

  • 8 slices Pams Finest Brioche Loaf

  • 4 large eggs, lightly beaten

  • ½ cup milk

  • ½ cup cream

  • 3 tablespoons caster sugar

  • 1 teaspoon vanilla extract

  • 1 teaspoon ground cinnamon

  • Butter, to fry

  • Blueberries, to serve

  • Maple syrup, to serve

  • Grated lemon zest, to serve

  • Icing sugar, to serve

Method

In a large shallow dish, whisk together eggs, milk, cream, sugar, vanilla and cinnamon. Working in batches, dip brioche slices in egg mixture, turning once, until moistened but not soggy.

In a nonstick frying pan, cook slices in butter over medium heat until golden brown. Flip to cook the other side.

Top with blueberries, syrup, zest and a dusting of icing sugar.
