Savoury crumpet French toast
Breakfast at home has never looked more enticing! French toast takes a savoury turn, with this quick, easy and flavour packed recipe. Want to make it vegetarian? Roast up some Portobello mushrooms for a delectable meat-free alternative.
- 3 eggs
- ½ cup milk
- ½ tsp paprika
- 4 store bought crumpets
- 50g butter
- 4 bacon rashers
- ¼ cup capsicum pesto
- ½ avocado, thinly sliced
- Rocket and aioli of choice, to serve
- In a bowl, whisk together eggs, milk and paprika with seasoning. Dip each crumpet into the egg mixture on both sides, then place into a hot, buttered pan.
- Cook crumpets for 3-4 minutes on each side until golden brown and cooked through. While the crumpets are cooking, pan fry or oven cook the bacon until crisp.
- Place 2 crumpets on each plate. Spread with pesto, then top with avocado slices and bacon. Serve with rocket and a generous drizzle of aioli.
