So good pancakes

Sanitarium's So Good brings you this delicious dairy-free pancake recipe. This masterpiece is created with only four different ingredients! And what could be better on a cold morning than a hot stack of pancakes? Yum.

Ingredients

  • 1¼ cups self-raising flour, sifted

  • 1 tablespoon caster sugar

  • 1 cup So Good Unsweetened Almond milk, plus ¼ cup extra

  • 2 eggs

Method

Combine flour and sugar together in a large bowl. Whisk So Good Unsweetened Almond milk and eggs together and pour into a well in centre of dry ingredients. Whisk, to form a smooth batter.

Heat a lightly greased, non-stick frying pan on medium. Cook ¼ cup of batter, in batches, for 2 mins, until bubbles appear on surface and begin to pop. Turn and cook for another 1 min, until golden. Repeat with remaining batter. Stack on a plate, cover and keep warm.

Serving Suggestion

Serve with a dollop of So Good Chocolate Almond or Vanilla Bliss Frozen Dessert and a few fresh berries of your choice or some caramelised pear and coconut.
