- A selection of ripe summer fruits such as rock melon, honeydew melon, plums, peaches, nectarines and strawberries
- 1 dessertspoon caster sugar
- 1/2 cup of sparkling wine, for example Lindauer Classic Rosé
- Dice fruit into a large serving bowl.
- Sprinkle the caster sugar over the fruit, mix together then pour the sparkling wine over the fruit.
Serve immediately and match with the remaining sparkling wine.
