Hot cross bun bliss balls
There is always a rogue hot cross bun that gets left behind, or goes a little stale in the cupboard. Don’t throw it out, use it as the base for these super healthy, nutritious and delicious hot cross bun bliss balls. They make a great snack for lunch boxes, afternoon tea or for whenever you’re feeling peckish.

- 1 hot cross bun
- 150 grams whole almonds (skin on)
- 20 dates (pitted)
- 2 teaspoons mixed spice
- 25 grams raisins
- 25 grams dried cranberries
- Food processor with blade attachment
Method
- Preheat the oven to 180°C and place a baking tray inside.
- Tear the hot cross bun into small pieces and place on the preheated tray.
- Bake for 5-7 minutes until the pieces are crispy and toasted.
- Remove and allow to cool slightly.
- Blitz the almonds in the food processor for 1-2 minutes until you have small granules.
- Add the dates, mixed spice, raisins, cranberries and toasted hot cross bun pieces and blitz again for 1-2 minutes until everything is chopped evenly and well mixed.
- Tip the mixture into a large bowl, then take a small handful, squeeze it together and form into a small walnut-sized ball. (The more tightly you squeeze the mixture the easier it will be to shape and stick together.)
- Roll the ball between the palms of your hands until it is round and even. Repeat with all the remaining mixture. You should easily get 12 bliss balls.
- Store them in an airtight container in the fridge and snack at your leisure.

- Want to level up your bliss balls? Melt some white or milk chocolate and drizzle over the top of them.
