30 minute meatball chilli

A comforting casserole pot of meatball chilli is ready in 30 minutes. This simple family-friendly meal is made of pantry staples from kidney beans and black beans to diced tomatoes, onions and garlic. It combines meatballs with a rich tomato sauce, flavoured with a taco spice mix.

  • 400g of your favourite meatballs
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 pack (35g) taco spice mix
  • 1 can (400g) kidney beans, drained and rinsed
  • 1 can (400g) black beans, drained and rinsed
  • 2 cans (800g) diced tomato in juice

Method

 

  1. Bring a drizzle of oil to medium-high heat in a large casserole pot. Cook the meatballs for a few minutes on each side or until golden. Remove from the pot and set aside on a plate.
  2. Add the onion and garlic into the casserole pot. Sauté for a few minutes or until softened.
  3. Stir in the taco spice mix, kidney beans, black beans and diced tomatoes.
  4. Return the meatballs back into the pot. Season with salt and pepper.
  5. Bring to a simmer, cover and cook for 10 minutes or until the meatballs have cooked through. Serve and enjoy.

Tips:

  • Tortilla chips, grated cheese, sour cream and coriander add the perfect finishing touch to this meatball chilli.
