Broccoli, bacon and pesto pasta
A lovely creamy pasta with the pesto livening up the sauce. For speed the bacon can be microwave for a few minutes. Roughly twenty minutes from opening the fridge to serving up, this has to be a winner!

- 350g dried spiral pasta
- 400g bacon, diced
- 1 broccoli, cut into florets
- ½ cup sundried tomato or basil pesto
- ½ cup sour cream
- ¼ cup grated parmesan cheese
Method
- Cook the pasta per packet instructions, reserving half a cup of pasta water.
- Bring a drizzle of oil to medium high heat in a large frying pan. Cook the bacon for 3-4 minutes or crispy. Remove from the pan and set aside.
- Using the same pan, cook the broccoli for 4-5 minutes or until tender.
- Add the cooked pasta, bacon, pesto and sour cream. Toss to combine; add the reserved pasta water if needed to thin the sauce. Season to taste with salt and pepper.
- Garnish with parmesan cheese and serve immediately.
Tips:
- Salami, ham or shredded chicken can be substituted for bacon.
- Easily double the recipe to cater to a larger crowd or for leftovers the next day.
