Moist lemon pie

Serves 4
Prep time: 20 minutes
Cooking time: 35 minutes

  • 125gms butter
  • 1 cup sugar
  • 1 cup flour
  • 1 tsp baking powder
  • 3 eggs
  • Grated rind of 2 lemons
  • 2 Tbsp sugar
  • 1 cup of natural yoghurt

  1. Cream butter & sugar.
  2. Add yoghurt, lemon rind and eggs.
  3. Add Flour and Baking Powder.
  4. Cook in greased tin for 30-40mins at 180C.
  5. Make Syrup Juice of 2 lemons and 2 tbsp sugar.
  6. Pour Syrup over cake while still warm.
  7. Serve with Cream or Yoghurt.
