Thyme and honey glazed pork roast

A masterpiece fit for your table, this thyme and honey glazed pork roast is a crowd pleaser. Sweet apple infused, honey, garlic and thyme glaze coats the roast pork for a meal that’s worth sharing.

  • 1-1.2kg bone-in pork shoulder, room temperature 
  • ¾ cup apple juice 
  • 1 Tbsp brown sugar 
  • ¼ cup honey 
  • 3 cloves garlic, minced 
  • 2 Tbsp white vinegar 
  • 1 Tbsp wholegrain mustard 
  • 3 sprigs thyme 
  • 1 onion, cut into wedges 

Method

  1. Preheat your oven to 200°C fan bake. Pat the pork dry with a paper towel and score the skin if not already. Place on a rack set over a roasting dish. Season generously with salt and pepper. Roast for 25 minutes. 
  2. Meanwhile, place a small saucepan over medium-high heat. Add the apple juice, brown sugar, honey, garlic, white vinegar, wholegrain mustard and thyme. Stir to combine, then season with salt and pepper. Simmer for 10 minutes, then remove from the heat. 
  3. Once the pork has roasted for 25 minutes, reduce the temperature to 150°C. Brush some of the thyme and honey glaze over the pork. Scatter the onions into the dish and pour in one and a half cups of water. 
  4. Return to the oven to cook for a further 1 ½ - 2 hours or until cooked through*, brushing with additional glaze every 30 minutes. Cover with foil if browning too quickly.     
  5. Once cooked, leave to rest for 15 minutes before slicing as desired. 

Top tip: Accompany your roast pork with some boiled seasonal veg cooked in your brand new saucepan.  

*The pork should reach an internal temperature of 71°C.
