Grilled courgette, feta and pomegranate salad

Tender grilled courgette on a bed of fresh baby rocket topped with crumbled feta and pomegranate arils. Have this deliciously light, crisp salad any day of the week.

Ingredients

  • 4 courgette

  • 2 lemons

  • 1 clove garlic, minced

  • 120g baby rocket

  • 100g feta cheese

  • ½ cup pomegranate arils

  • ⅓ cup roughly chopped walnuts, toasted

  • Large handful fresh parsley, roughly chopped

Method

  1. Bring a BBQ or large grill pan to medium-high heat and brush with oil. Slice the courgette lengthways into long strips. Season with salt and pepper.

  2. Grill the courgette for a few minutes on each side or until charred and tender.

  3. To make the dressing, whisk together the juice of one lemon, garlic, a generous drizzle of olive oil, salt and pepper.

  4. Scatter the rocket over a serving platter or plate. Top with grilled courgette, crumbled feta, pomegranate and walnuts. Drizzle over the lemon dressing. Cut the remaining lemon into wedges.

  5. Garnish with parsley and lemon wedges. Serve and enjoy.

Top tip: Accompany this salad with toasted garlic pita bread for a tasty meal.
