Great for lunch boxes, this hearty vegetarian salad is loaded with lots of nutritious ingredients.

Ingredients

- 3/4 cup uncooked quinoa
- 1/2 red onion chopped
- 1 cup of cooked peas
- 1 cup shredded cabbage
- 1 cup shredded carrot
- 2 garlic cloves minced
- 3 tablespoons soy sauce
- 1 tablespoon honey
- 2 tablespoons water
- 1/4 cup peanut butter
- 2 tablespoons sesame oil
- 1 tablespoon olive oil
- Juice of one lemon
- 1 lime zest
- 1 tablespoon lime juice (to serve)
- 1 handful of pumpkin seeds
