The Elvis Sammie

Inspired by one of Elvis Presley’s favourite sandwiches, this sweet n’ savoury sammie is the ultimate indulgent treat. Caramelised banana, crispy bacon, and creamy peanut butter come together on toasted bread for a rock ‘n’ roll lunch – you might just need a lie down afterwards!

  • 1 ripe banana 
  • 1 tbsp maple syrup  
  • 3 rashers streaky bacon 
  • 2 slices white bread 
  • 1–2 tbsp peanut butter  
  • Butter 

Method

  1. Slice the banana in half lengthways and set aside. 
  2. Place the bacon into a cold frying pan. Cook over medium heat until crispy, turning as needed. Set aside on a paper towel. 
  3. In the same pan, add a knob of butter and 1 tbsp of maple syrup and stir together while they bubble. Add the banana halves, cut side down. Cook for 2–3 minutes until golden and sticky. Carefully flip and cook the other side for 1 minute before removing from the pan.  
  4. Lightly butter the outside of both bread slices. Place in the same pan and toast until golden to your liking on the buttered side. Briefly toast the other side. 
  5. Spread peanut butter over one slice of toasted bread. 
  6. Layer on the caramelised banana and crispy bacon. 
  7. Top with the second slice of bread and press gently. 
  8. Serve as is, or drizzle with extra maple syrup.  

Top tips: 

  • Add a spoonful of jam before stacking if you want to combine all of Elvis’ faves.  
  • I used a loaf of white bread from the New World bakery to make it extra delicious.  
  • Stick a toothpick through the middle with a couple of glacé cherries for that retro diner finish.
