Whole prawns with garlic butter and watercress
Showcasing the best of Aotearoa’s kai moana this prawn and garlic butter dish will have you wanting more. Deliciously quick and easy to make, it’s the perfect meal to share with your whānau and friends. Be sure to serve with some fresh bread so you can mop up all the tasty juices.
- 30g butter
- 1 Tbsp olive oil
- 4 garlic cloves, minced
- 1kg whole prawns
- 1 cup watercress, roughly chopped
- Juice of ½ lemon
- Fresh bread, to serve
- Bring a large frying pan to a medium heat. Once hot, add the butter, olive oil and garlic. Cook while stirring for 1-2 minutes to allow the garlic to cook.
- Add the prawns to the pan, and cook while stirring for 3-4 minutes or until all of the prawns have turned pink.
- Stir the chopped watercress through the prawns, then squeeze over the lemon juice. Season with salt and pepper, then serve immediately with fresh bread.
