Christmas leftovers traybake
Reimagine your Christmas leftovers with this festive traybake. Super easy to throw together in one tray, it’s low maintenance and uncomplicated with minimal cleanup after an eventful day.

- 4 cups leftover roast vegetables (we used carrot, kumara, red onion and potato)
- 2 cups leftover meat, shredded (we used roast chicken)
- ½ cup onion relish
- 3 Tbsp fresh thyme or rosemary leaves
Method
- Preheat your oven to 200°C fan bake.
- Scatter the roast vegetables and shredded meat in a large oven tray. Drizzle with oil and season with salt and pepper if desired.
- Top with dollops of onion relish.
- Scatter thyme over the top.
- Bake for 15-20 minutes or until heated through.
- Serve and enjoy.
