Serves   1 cup
Prep time: 5 mins
Cooking time: N/A

Green goddess dressing has been doing the rounds on social media for good reason, it’s so addictively good it will have you forgetting you are eating a bunch of greens. It’s verstile and can enhance many different dishes. Toss it through salads, use as a dip or drizzle over tacos. We serve ours on a simple chopped green salad of iceburg lettuce, green cabbage and spring onion.

Anchor Original Sour Cream Creamy, zesty, and packed with goodness, NZ avocado makes this Green Goddess Dressing irresistibly smooth.

Green goddess dressing

Ingredients

Method

Ingredients

  • 1 avocado
  • 1 shallot, peeled and quatered
  • 2 lemons
  • 2 cloves garlic, peeled
  • 1 cup fresh basil
  • 1 cup baby spinach leaves
  • ¼ cup olive oil
  • ¾ cup water

Method

  1. Add all of the ingredients to a blender or food processor.
  2. Season with salt and pepper to taste and blend until smooth.
  3. Serve over your favourite salad or store in the fridge for up to 5 days.

Top tip: Mix up the herbs to suit your tastes or what’s in season. Coriander, parsley, chives, dill or mint all work well and add their unquie flavour.

Add a tablespoon or two of honey or sugar to balance the flavours if the dressing is bitter for your tastes.
