Green goddess dressing
Green goddess dressing has been doing the rounds on social media for good reason, it’s so addictively good it will have you forgetting you are eating a bunch of greens. It’s verstile and can enhance many different dishes. Toss it through salads, use as a dip or drizzle over tacos. We serve ours on a simple chopped green salad of iceburg lettuce, green cabbage and spring onion.

- 1 avocado
 - 1 shallot, peeled and quatered
 - 2 lemons
 - 2 cloves garlic, peeled
 - 1 cup fresh basil
 - 1 cup baby spinach leaves
 - ¼ cup olive oil
 - ¾ cup water
 
Method
- Add all of the ingredients to a blender or food processor.
 - Season with salt and pepper to taste and blend until smooth.
 - Serve over your favourite salad or store in the fridge for up to 5 days.
 
Top tip: Mix up the herbs to suit your tastes or what’s in season. Coriander, parsley, chives, dill or mint all work well and add their unquie flavour.
Add a tablespoon or two of honey or sugar to balance the flavours if the dressing is bitter for your tastes.
