Marinated cheese appetizer

- 225g cheddar cheese, cut into 2cm thick slices
- 225g cream cheese, cut into 2cm slices
- 1 teaspoon sugar
- 1 teaspoon dried basil
- ½ cup olive oil
- ½ cup white vinegar
- 3 garlic cloves, minced
- Salt & pepper
Optional:
- 1 tablespoons fresh parsley, chopped
- 3 tablespoons spring onions, chopped
Serving suggestions:
- Pitted olives, sliced
- Roasted red pepper slices
- Cherry tomatoes, halved
- Crackers or sliced baguette
Method
- Alternate the cream cheese and cheddar cheese slices into rows in a Medium Baker dish and set aside.
- Make the marinade by mixing the remaining ingredients together, and then pouring it over the cheese
- Cover and marinate the cheese in the fridge overnight
- Serve the next day with fresh herbs on top and your choice of added serving suggestions on top
Top tips:
- Is it better to use spreadable cream cheese or the block? A block would be easier to cut with, but spreadable cream cheese also works—just dollop it between the cheese layers instead!
- Can I use something else instead of sugar? Yes, the sugar is just to add something sweet. Feel free to use honey or agave syrup instead. It will need to be mixed slightly longer to dissolve the thick liquid.

- How long can I store this for? As this has dairy, we recommend storing this in the fridge. This can be stored in a sealed container for up to 5 days in the fridge. The flavour will intensify over time. We don’t recommend freezing this as the cream cheese will change in texture.
