Avocado hollandaise
A great way to use ripe avocados and make a tasty versatile condiment suitable for all kinds of different applications. It’s super easy to throw together this hollandaise with 5 ingredients, a blender and 10 minutes.

- 1 ripe avocado
 - 2 egg yolks
 - 2 Tbsp fresh lemon juice
 - ¼ tsp paprika
 - 120g butter, melted and hot
 
Method
- Blitz avocado, egg yolks, lemon juice and paprika with a hand blender or in a blender until smooth.
 - Gradually add in the butter with the motor running until thick and creamy.
 - Season to taste with salt and pepper.
 - Serve.
