
Creamy whipped feta with roast balsamic tomatoes

The fresh tanginess of feta and authentic Greek yoghurt perfectly balances the sweetness of balsamic roasted tomatoes in this simple, creamy dreamy whipped feta dish. Perfect for sharing or spoiling yourself!

Ingredients
190g (1 block) cow’s milk feta
3 tbsp Puhoi Valley natural authentic greek yoghurt
¼ cup olive oil
½ a lemon, juiced
½ tsp paprika
2 punnets cherry tomatoes, mixed colours
½ cup balsamic vinegar
2 tbsp olive oil
Salt & pepper, to taste
Ciabatta, or sourdough, to serve
Fresh basil leaves, to garnish
Method
Preheat the oven to 180°.
Add rinsed cherry tomatoes to a baking tray.
Coat with balsamic vinegar, olive oil, salt and pepper then bake for 20 minutes until well roasted.
Add all the whipped feta ingredients to a food processor and blend for 2 minutes until smooth and creamy.
Spread the whipped feta over a serving plate, top with the roasted tomatoes and fresh basil leaves. Serve with bread.
