Creamy whipped feta with roast balsamic tomatoes

- 190g (1 block) cow’s milk feta
- 3 tbsp Puhoi Valley natural authentic greek yoghurt
- ¼ cup olive oil
- ½ a lemon, juiced
- ½ tsp paprika
- 2 punnets cherry tomatoes, mixed colours
- ½ cup balsamic vinegar
- 2 tbsp olive oil
- Salt & pepper, to taste
- Ciabatta, or sourdough, to serve
- Fresh basil leaves, to garnish
Method
- Preheat the oven to 180°.
- Add rinsed cherry tomatoes to a baking tray.
- Coat with balsamic vinegar, olive oil, salt and pepper then bake for 20 minutes until well roasted.
- Add all the whipped feta ingredients to a food processor and blend for 2 minutes until smooth and creamy.
- Spread the whipped feta over a serving plate, top with the roasted tomatoes and fresh basil leaves. Serve with bread.
