Baked feta three ways

If you haven’t already seen the baked feta and tomato recipe taking the internet by storm, let us introduce you; with a New World twist! Baked feta, served in three delicious ways.

  • 200g block feta cheese 
  • 400g cherry tomatoes 
  • 2 cloves garlic, finely chopped 
  • Extra virgin olive oil 
  • Large handful fresh basil leaves, chopped 

Method

  1. Preheat your oven to 200 degrees Celsius fan bake. Place the feta into the centre of a baking dish, then scatter the tomatoes and garlic around the feta.
  2. Drizzle generously with olive oil, then season with salt and pepper. Place into the oven and bake for 30-40 minutes, or until the feta is golden and the tomatoes have broken down. Garnish with fresh basil leaves.
With pasta:

Cook 350g dried pasta of your choice as per pack instruction. Use a fork to break down the tomatoes and feta, then stir to create the sauce. Add the cooked and drained pasta to the sauce, then stir through with the chopped basil leaves. Stir to combine and serve immediately.
 

Bruschetta:

Drizzle sliced white bread with olive oil, then grill or toast until golden. Spread some of the baked feta over the toast. Drape a slice of prosciutto over the feta, then spoon some of the baked tomatoes over the top. Garnish with fresh basil leaves. 

Sweet & Savoury:

Omit the cherry tomatoes and garlic and replace with equal quantities of green and red grapes. Sprinkle over 1 sprig of rosemary leaves, drizzle with 1 Tbsp honey then bake as per original recipe. To finish, drizzle generously with 1tsp of honey then, serve alongside your favourite crackers or toasted bread.
