Easy falafels
Fit these easy falafels into your mid-week routine! They’re herbaceous, appetising and absolutely delicious. Serve with a dressed leafy green salad topped with sliced avocado for a flavoursome meal solution.

- 1 can (400g) Pams chickpeas, drained
- 3 cloves garlic, minced
- 1 small onion, diced
- ¼ cup fresh coriander
- ½ cup fresh parsley
- 3 Tbsp plain flour
- 1 tsp cumin
- 200g of your favourite hummus (we used feta and spinach)
Method

In a food processor combine chickpeas, garlic, onion, coriander, half the parsley, flour and cumin. Season with salt and pepper and pulse until well combined.

Transfer to a bowl, cover and place in the fridge to firm up for at least 30 minutes.

Bring a generous drizzle of olive oil to medium-high heat. Form the falafel mixture into 12 patties and cook for a few minutes on each side or until crispy and golden brown.

Spread the hummus over a serving platter or plate and top with the falafel.

Garnish with the remaining parsley before serving.
Top Tip:
- The mixture for these falafels can be prepared a day in advance and stored in the fridge until required.
