Easy falafels

Fit these easy falafels into your mid-week routine! They’re herbaceous, appetising and absolutely delicious. Serve with a dressed leafy green salad topped with sliced avocado for a flavoursome meal solution.

Ingredients

  • 1 can (400g) Pams chickpeas, drained

  • 3 cloves garlic, minced

  • 1 small onion, diced

  • ¼ cup fresh coriander

  • ½ cup fresh parsley

  • 3 Tbsp plain flour

  • 1 tsp cumin

  • 200g of your favourite hummus (we used feta and spinach)

Method

  1. In a food processor combine chickpeas, garlic, onion, coriander, half the parsley, flour and cumin. Season with salt and pepper and pulse until well combined.

  2. Transfer to a bowl, cover and place in the fridge to firm up for at least 30 minutes.

  3. Bring a generous drizzle of olive oil to medium-high heat. Form the falafel mixture into 12 patties and cook for a few minutes on each side or until crispy and golden brown.

  4. Spread the hummus over a serving platter or plate and top with the falafel.

  5. Garnish with the remaining parsley before serving.

Top Tip:

  • The mixture for these falafels can be prepared a day in advance and stored in the fridge until required.
